Dry Curing Local Ham Experience in Northern Miyagi​

At IZUNUMA NOUSAN we offer a service to make your own original dry-cured ham. Start by purchasing the raw meat then receive instructions how to prepare the meat at our experience classroom. Our staff will keep and care for your ham then send it to you after it is aged and cured.

【Flow of Experience】
1. Application and Payment
Please apply for the experience program at least 2 weeks in advance.
Pay in advance by bank transfer or cash on the day.

2. Dry Curing Ham Experience
After staff explain how to make dry-cured ham, participants will dry rub the ham with salt (Experiences held on the 1st Saturday of every month). After that, the ham is taken by professional staff for aging and curing.

3. Tasting (optional, whole leg only)
You can taste (sample size) ham that has been aged and cured for over 12 months! If you are interested, please make a reservation at least 10 days in advance.

4. Delivery/ Additional Aging
When your ham is almost ready, we will contact you. The ham can be further aged if desired, so please let us know if you wish to extend the period (additional fee required).

Hams sold at most stores in Japan are imported, but with this experience you’ll be able to learn about and taste local high quality ham. "Izunuma Pork," a brand of pig raised and produced by IZUNUMA NOUSAN Co., Ltd. was bred using a Duroc breed "Shimofuri Red" pig as the father. At our local specialty farm, pigs are carefully and lovingly raised on a select diet of seaweed minerals and Bacillus subtilis. Our high-quality pork is a tender meat with a vivid red color and no odors.

About suspension of the activityThe experience may be cancelled if there are not enough materials able to be procured, equipment malfunction/failure, or natural disaster.
We will contact you if it is decided that the experience will be canceled due to such circumstances.
Important notes regarding participation● Bring an apron and triangular handkerchief or bandana.
● Clean the end of your nails and fingertips.
● Those under 10 years old must be accompanied by a guardian as there are parts of the session which will require assistance.
● In the case of another reservation or event, the experience may be held at the City Agriculture Exchange Hall.
